What you’ll need:

  • 2 Delta Pride Catfish fillets
  • 1 1⁄2 cups new potatoes
  • 1 cup Brussels sprouts, halved
  • 1 ear yellow corn, cut in half, then quartered lengthwise
  • Olive oil
  • Cajun seasoning
  • 3 whole garlic bulbs, tops removed
  • 4 large shrimp
  • 1 lemon, sliced

How to prepare:

Prehead oven to 350° F. Line a sheet tray with parchment paper.

Combine potatoes, Brussels sprouts, and corn. Drizzle with oil, and toss to coat. Season with Cajun seasoning blend.

Place on parchment paper, leaving room in the middle for catfish. Add garlic, and drizzle tops with a little oil. Bake for 20 minutes.

Prepare catfish and shrimp by drizzling them with oil and seasoning them with Cajun seasoning.

REMOVE from oven. Add catfish, shrimp, and lemon slices to the pan.

BAKE for an additional 15 minutes or until catfish is golden and flakes easily.
