I want to add a suggestion about adding lemon juice. #mscatfishlady slices a well-washed lemon into 6-8 portions, depending on the size of the lemon, and tosses them in with the fish to bake. The baked lemon slices produce much more juice than the refrigerated or room-temperature ones.
Take care that you do something other than what #mscatfishlady did here. I dipped the fish in the olive oil and added all the seasonings, including the capers. Well, you can see that the seasonings were too brown. Sprinkle the seasonings on and bake for 20 minutes. Begin watching the fish for about 15 minutes to ensure the seasonings do not brown. Cover with foil for the remainder of the cooking time if the seasonings begin to brown. Toss on the capers prior to serving.
Do not omit the capers. They are delicious!
