Ingredients:

-4 Delta Pride Catfish fillets
-2-2.5 tablespoons butter, melted
-1/4 cup lemon juice
-2 tablespoons parsley, minced
-1 teaspoon garlic powder
-1 teaspoon onion powder
-1/2 teaspoon smoked paprika
-1/4 teaspoon cayenne pepper
-Salt and pepper to taste 

Instructions:

  1. Preheat the oven to 375°F (190°C). 
  2. Place the catfish fillets in an oven-safe baking dish. 
  3. Mix the melted butter, lemon juice, parsley, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper in a small bowl. 
  4. Pour the butter mixture over the catfish fillets and spread evenly. 
  5. Bake in the preheated oven for 15-20 minutes, until the fish is cooked. 

Roasted Brussels Sprouts 
Ingredients: 

-1 lb Brussels sprouts 
-2 tablespoons olive oil 
-1 tablespoon balsamic vinegar 
-1 teaspoon garlic powder 
-1 teaspoon dried oregano 
-1/2 teaspoon salt 
-1/4 teaspoon freshly ground black pepper 

 

Instructions: 

  1. Preheat oven to 400 degrees F. 
  2. Cut off the ends of the Brussels sprouts and remove any yellow outer leaves. 
  3. Cut each sprout in half, from top to bottom. 
  4. In a large bowl, combine the olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper. Mix well.
  5. Add the Brussels sprouts to the bowl and mix until they are coated with the oil and seasonings. 
  6. Spread the Brussels sprouts in a single layer on a baking sheet.
