What you’ll need:
- Skewers:
- 4 Selta Pride Catfish fillets
- 2 tbsp Olive Oil
- 1/2 tbsp Creole Seasoning
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Black Pepper
- 1 tsp Smoked Paprika
- Red Bell Pepper
- Green Bell Pepper
- Yellow Bell Pepper
- Red Onion
- Bourbon Glaze:
- 1/4 c. Bourbon
- 1/2 c. Low Sodium Soy Sauce
- 1/2 c. Dark Brown Sugar
- 1/2 tsp Dijon Mustard
- 1 tbsp Honey
How to prepare:
For the Skewers:
Preheat oven to 425 degrees
Cut 4 Delta Pride Catfish Fillets into bite-size pieces and season with 2 tbsp Olive Oil, 1/2 tbsp Creole Seasoning, 1 tsp Onion Powder, 1 tsp Garlic Powder, 1 tsp Black Pepper, and 1 tsp Smoked Paprika. Chop 1/2 of a Red, Green, and Yellow Bell Pepper into pieces. Chop 1/2 of a Red onion into pieces.
Assemble your skewers with chopped red onion, catfish, and Bell Peppers, and repeat. You can make your skewers however you like.
Spray a lined baking sheet with non-stick spray and place skewers on it.
Bake for 15-20 minutes.
Bourbon Glaze:
In a pan on low to medium heat add:
1/4 c. Bourbon
1/2 c. Low Sodium Soy Sauce
1/2 c. Dark Brown Sugar
1/2 tsp Dijon Mustard
1 tbsp Honey
Mix well and simmer for 15 minutes and add glaze to both sides of skewers and enjoy !
